- Matcha Grading and Pairing
They are equipped with in-depth knowledge about different grades, origins, and taste profiles of matcha that go with different bases like soy milk, full cream milk, almond milk, etc. Akin to wine pairing, certain matcha profiles are matched specifically only to certain bases using authentic premium and ceremonial grade matcha from Japan
- Traditional matcha whisking
To bring out the best flavour in matcha, they go through some rounds of sifting and filtering before using a traditional Japanese style bamboo whisk to expand the matcha’s natural aroma, flavour and taste. It is attentively whisked to order and every cup of matcha is hand whisked by either one of the trained baristas. With traditional type whisking, matcha will turn out to be much smoother and aromatic.
By far, their signature matcha type is the YURI Matcha, harvested from the grasslands of central Japan and specifically paired with either Yabukita tea or latte. A barista typically spends an average of 5 minutes alone crafting the drink from whisking, mixing to serving.
